From Copenhagen to Møn—a new beginning
Before opening ELLEVILDE Boutique Hotel, Kirstine and Kenneth Ellegaard ran Restaurant 56 Grader in Copenhagen for 16 years. There, they gained extensive experience—both with daily restaurant service and with a large banquet hall, where they hosted countless weddings and memorable celebrations. But they longed for more time together as a family, without compromising their ambitions. Fortunate circumstances and serendipity brought them to Møn, where their experience and dreams could flourish and become a reality—their new home and adventure, centered on togetherness, quality ingredients, and tranquility.
A family project brimming with love and creativity
The ELLEVILDE family consists of Kenneth and Kirstine and their three children, Katrine (b. 2011), Kaya (b. 2015), and Kamille (b. 2016). They live in the main house of the classic Danish four-winged farmstead dating from 1897, where the former stable now houses the hotel’s guest rooms. Daily life at the hotel is thus closely intertwined with family life. For them, ELLEVILDE is far more than just a business—it’s a shared project, driven by creative energy and the desire to create something that is entirely their own.
When they first saw the place, they immediately fell in love with it. They could see the potential for a unique and personal hotel where guests could feel at home and enjoy nature and tranquility—and at the same time, an opportunity for them to combine their skills and work together as a family.
A Focus on Gastronomy and Hospitality
Kenneth is Ellevilde’s head chef—both on a daily basis and for all events—and every Wednesday, he serves as the sauna master, showcasing his multifaceted skills with ingredients and pampering the senses. Kirstine is the heart of the house and the hotel owner, with a lifetime of experience in welcoming and caring for people—as a server, receptionist, and everything in between. With her warmth, calm demeanor, and eye for detail, she has a natural ability to make guests feel right at home.

Ellevilde Boutique Hotel would like to become a Business Biosphere Ambassador because we actively embody the values represented by the Møn UNESCO Biosphere Reserve: local ingredients, reduced food waste, respect for nature, and a close relationship with the local community.
We live privately at the same address as the hotel with our three children, which blends family life with the hotel’s daily routine and the natural surroundings.
Our commitment:
- Local and organic ingredients: We strive to make our food as organic as possible, where it makes sense to do so. The rest of our ingredients come from the island: meat from sustainably raised cattle, foraged items from the natural surroundings, and pesticide-free vegetables from our own garden and local partners on Møn. Our flexible “Daily Special” concept reduces food waste and ensures that we always use the best seasonal ingredients.
- Nature Education: We use the hotel as a platform to raise guests’ awareness of nature and Dark Sky Møn through nature-based activities such as foraging tours, cooking classes, and guided stargazing walks.
For us, serving as an ambassador for the Møn UNESCO Biosphere Reserve means taking on an active responsibility to protect and promote Møn’s unique values. We want to share our experiences with specific nature and food initiatives with other businesses. We look forward to actively participating in the business network.
