From Copenhagen to M\u00f8n – a new beginning<\/strong><\/p>

For many years we, the family behind ELLEVILDE Boutique Hotel, ran Restaurant 56 degrees in Copenhagen (2007-2023). From here we’ve gained a lot of experience, especially from our large banquet hall where we’ve hosted countless weddings and other memorable events. Now we’ve packed up our passion and expertise and moved to beautiful M\u00f8n, where we’ve found our new home and adventure.<\/p>

A family project filled with love and creativity<\/strong><\/p>

We are a family of five – Kenneth and Kirstine, and our three children, Katrine (b. 2011), Kaya (b. 2015) and Kamille (b. 2016).<\/p>

For us, ELLEVILDE Boutique Hotel is more than just a place – it’s a family project driven by our love for each other, our creative minds and our desire to create something special.<\/p>

When we first saw this amazing place, we immediately fell in love. We could see the potential to create a unique and personal hotel where guests can feel at home and enjoy the beautiful nature and tranquil atmosphere. At the same time, it allowed us to combine our skills and work together as a family.<\/p>

Gastronomy and hospitality in focus<\/strong><\/p>

Kenneth, who is a professional chef, is responsible for the food at the hotel. With his passion for great ingredients and creative flavors, he creates culinary experiences that pamper your taste buds. Kirstine is a professional waiter and is responsible for planning and hosting. With her attention to detail and natural hospitality, she will make sure your stay is perfect.<\/p>

Ellevilde Boutique Hotel<\/b> wants to become a Business Biosphere Ambassador because our business model is directly rooted in the principles of sustainable development and local community<\/b> that the M\u00f8n UNESCO Biosphere Reserve represents.<\/p>

Our daily operations are a living example of co-creation with nature. We live privately at the same address as the hotel with our three children, integrating family life with business values and local nature. <\/p>

  • Sustainable Gastronomy:<\/b> As a hotel with a restaurant (Kenneth E), we prioritize organic, local produce<\/b> from our own garden and close partners on M\u00f8n. Our flexible menu reduces food waste and ensures that we always use the best of the season. <\/p><\/li>

  • Nature education:<\/b> We use the hotel as a platform to make our guests aware of nature and Dark Sky M\u00f8n through nature-based activities<\/b> such as foraging trips, cooking school and guided star walks.<\/p><\/li><\/ul>

    Being an ambassador for M\u00f8n UNESCO Biosphere means for us taking an active responsibility<\/b> to protect and communicate M\u00f8n’s unique values. We want to act as a role model<\/b> and show others that sustainability is not a limitation, but an authentic and meaningful basis for business<\/b>.
